This rich and savory dish combines tender slow-cooked beef with caramelized onions, melted cheese, and crispy toasted bread for a comforting, flavor-packed meal.
● 1 lb beef chuck roast
● 2 tablespoons olive oil
● Salt and black pepper, to taste
● 2 large onions, thinly sliced
● 3 cloves garlic, minced
● 4 cups beef broth
● 1 tablespoon Worcestershire sauce
● 1 teaspoon fresh thyme (plus extra for garnish)
● 1 bay leaf
● 4 slices crusty bread
● 1 cup shredded Gruyère cheese
● 2 tablespoons butter
I. Season the beef chuck roast with salt and black pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat and sear the beef on all sides until browned. Remove and set aside.
II. In the same pot, add butter and sliced onions. Cook on medium heat, stirring occasionally, until the onions are deeply caramelized, about 25 minutes.
III. Add garlic and cook for another minute, then pour in the beef broth, Worcestershire sauce, thyme, and bay leaf. Return the seared beef to the pot, cover, and let it simmer on low heat for 2-3 hours until tender.
IV. Once the beef is tender, shred it into chunks. Toast the bread slices until golden brown.
V. Place the shredded beef over the toasted bread, ladle some of the onion broth over it, and top with shredded Gruyère cheese.
VI. Broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly. Garnish with fresh thyme and serve immediately.
