OLIVE GARDEN FAGIOLI SOUP
HOW TO MAKE COPYCAT OLIVE GARDEN FAGIOLI SOUP
This traditional Italian soup is guaranteed to win you over since it is packed to the gills with beans, vegetables, noodles, and lean meat. I am happy to bring to you a recipe that I have developed to replicate Olive Garden’s Pasta e Fagioli. In my opinion, this dish is even more delicious than the one served in the restaurant. This soup will quickly become one of your favorites.
If you’re looking for a substantial soup to prep for the week, go no further than this one. It may be prepared with only one pot, and it reheats well every day of the week. It is also quite nutritious and satisfying.
In Italy, this « Pasta e Fagioli » means “pasta with beans”. This makes a great deal of sense taking into consideration the fact that this soup is loaded with pasta and beans. It is also packed with flavorful vegetables and lean ground beef, turning it into a complete meal that can be eaten out of a bowl.
Ingredients
500 grams.Of lean ground beef.
1 large sp.Of olive oil.
2 medium cubed carrots.
1 large diced onion.
1 stalk celery; diced.
3 cloves.Of garlic; crushed.
Canned diced tomatoes; I used 400 grams can.
A 400 grams jar.Of tomato sauce.
Chicken broth; you’ll need 4 to 5 cups.
Canned Northern beans; use a medium can, drained and rinsed.
Canned Kidney beans; use a medium can drained and rinsed.
1 Cup.Of small pasta.
1 large sp.Of Italian seasoning
Salt; adjust it to taste.
Black pepper; adjust it to taste.
PREPARATION:
1st Step
Prepare the oil in a big saucepan or dutch oven by heating it over medium heat.
2nd Step
Brown the ground beef and add it to the pan (3-5 minutes). Make sure to cut it up into little pieces before you start cooking. Take the meat out of the pot after it has been cooked. Remove the extra fat and keep it aside.
3rd Step
Add the carrots, onion, celery, and garlic that were previously minced to the same pot. Sauté the veggies until they have reached the desired consistency (for about 4 minutes).
4th Step
Return the meat and beef broth to the saucepan with the cooked veggies, and to incorporate all ingredients together, give it a good stir.
5th Step
To the mixture, add Northern beans as well as kidney beans. Pour the chicken broth into the pot and let it simmer for about ten min.
6th Step
After adding the pasta, season it with Italian seasoning, salt, and pepper, and let it simmer for an additional ten minutes.
7th Step
Serve immediately, garnishing each serving with a sprinkling of basil and parmesan cheese.
