Shrimp and Crab Melt Texas Toast Appetizers

Shrimp & Crab Melt Texas Toast appetizers w/marinara sauce or dip ☺😋 Added Lump Crabmeat & Steamed Snow Crabs, came out perfect! 

You’ll need:
8-12 Large Shrimp or 20-21 small (peeled & deveined)
1lb Snow Crab (steamed, cooked through) and or 2 cans Lump Crabmeat
1 Tomato (diced)
1 T Butter
1 T Olive Oil (I used Garlic flavored oil)
½ T Salt, Pepper & Garlic Salt
½ T Honey
1 T Garlic (chopped)
Splash of Lemon juice & zest

For filling:

2 T Mayo (I used Miracle Whip)
¼ C Lemon Juice
1 C Mozzarella (shredded)
½ C Parmesan Cheese (shredded)
½ C Parmesan Cheese (grated)
Texas Toast, French, Sourdough, Cibatta or
6 slices of whole wheat bread
Fresh Cilantro (garnish)

Directions:

1. Heat oven to 400°
2. In a skillet over Med heat, add butter & oil. Pat shrimp dry then season. When butter slightly browns, add your shrimp then immediately drizzle with honey. Cook for 2 mins per side. Lower heat to Med low.
3. Next, add in your tomatoes and garlic, cook an additional 3 minutes just til blended. Do not overcook. Remove, drain and let cool 5 mins.
4. In a separate bowl, add the shrimp mixture, Crabmeat, mayo, lemon juice and cheese (reserve ½ C cheese for topping). Mix this well. Taste to test and try not to eat it all!
5. On a baking sheet add your bread. Scoop the mixture on top of the bread. Arrange the shrimp evenly. Sprinkle a pinch of remaining cheese on top, bake for 18-20 mins. If using whole wheat bread, cut cooking time to 12-14 minutes. Garnish with fresh cilantro. Serve immediately 🥂
