Apple Cake

Apple Cake for a Freshly Sweet Year 

Ingredients:

  • 3 green apples, peeled and diced into bite-sized cubes
  • 2-3 tablespoons of granulated sugar
  • 1/2 teaspoon of ground cinnamon
  • 3 medium eggs
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup apple juice or applesauce
  • 1 1/2 cups sifted flour
  • 1 tablespoon baking powder

Instructions:

  1. Sauté Apples: In a pan over medium heat, toss the apple cubes with sugar and cinnamon. Let them caramelize gently for about 10 minutes, stirring occasionally. Set aside to cool.
  2. Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9-inch round baking pan to prevent sticking.
  3. Prepare Batter: With an electric mixer, whisk the eggs and sugar for two minutes until the mixture is light and fluffy. Gradually incorporate the oil, followed by the apple juice (or applesauce). Slowly fold in the sifted flour and baking powder until well combined.
  4. Assemble Layers: Pour half of the batter into the prepared baking pan. Scatter half of the sautéed apples over the top. Repeat this process with the remaining batter and apples.
  5. Bake: Slide the pan into the oven and bake for approximately 50 minutes, or until a toothpick inserted in the center comes out clean.
