How to cook steak – like a chef!

Ingredients

  • 2 ribeye or New York strip steaks (1.5-2 inches thick)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, crushed
  • 2-3 fresh rosemary sprigs

Instructions

  1. Remove steaks from refrigerator 30-60 minutes before cooking to bring to room temperature.
  2. Pat steaks dry with paper towels and season generously with salt and pepper on both sides.
  3. Heat a cast-iron skillet over high heat until very hot.
  4. Add vegetable oil to the skillet and swirl to coat.
  5. Carefully place steaks in the hot skillet and cook for 3-4 minutes on each side for medium-rare, or adjust time for desired doneness.
  6. Reduce heat to medium-low, add butter, garlic, and rosemary to the skillet.
  7. Tilt the skillet slightly and use a spoon to baste the steaks with the melted butter mixture for 1-2 minutes.
  8. Remove steaks from skillet and let rest on a cutting board for 5-10 minutes.
  9. Slice against the grain and serve with your choice of sides.

  • For best results, use a meat thermometer to check internal temperature: 125°F for rare, 135°F for medium-rare, 145°F for medium.
