Ingredients
- 2 ribeye or New York strip steaks (1.5-2 inches thick)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 2 garlic cloves, crushed
- 2-3 fresh rosemary sprigs
Instructions
- Remove steaks from refrigerator 30-60 minutes before cooking to bring to room temperature.
- Pat steaks dry with paper towels and season generously with salt and pepper on both sides.
- Heat a cast-iron skillet over high heat until very hot.
- Add vegetable oil to the skillet and swirl to coat.
- Carefully place steaks in the hot skillet and cook for 3-4 minutes on each side for medium-rare, or adjust time for desired doneness.
- Reduce heat to medium-low, add butter, garlic, and rosemary to the skillet.
- Tilt the skillet slightly and use a spoon to baste the steaks with the melted butter mixture for 1-2 minutes.
- Remove steaks from skillet and let rest on a cutting board for 5-10 minutes.
- Slice against the grain and serve with your choice of sides.
