Italian Sausage Vegetable Skillet Feast – A One-Pan Wonder!
Ingredients:
1 lb Italian sausage (sweet or spicy), casings removed
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 bell pepper (any color), sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 cup sliced mushrooms
1 cup spinach or kale, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper to taste
Fresh parsley, chopped (for garnish, optional)
Instructions:
Cook the Sausage:
Heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it up with a spoon as it cooks. Cook until browned and cooked through, about 6-8 minutes. Remove the sausage from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add Remaining Vegetables:
Add the bell pepper, zucchini, cherry tomatoes, and mushrooms to the skillet. Cook for about 5-7 minutes, or until the vegetables are tender.
Combine and Season:
Return the cooked sausage to the skillet. Stir in the spinach or kale and cook until wilted, about 2 minutes.
Sprinkle with dried oregano, dried basil, salt, and black pepper. Stir to combine.
Serve:
Garnish with fresh parsley if desired. Serve warm as a complete meal or over rice or pasta.
