Ingredients

For the Chicken Marinade:

  • 1 cup mayonnaise
  • 1/4 cup lemon juice
  • 1 tsp garlic powder
  • 1 tsp chili flakes (adjust to taste)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1 kg chicken pieces (wings, thighs, or breasts)

For the Chunky Chips:

  • 4 large potatoes (peeled and cut into wedges)
  • Salt (for boiling water)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, combine mayonnaise, lemon juice, garlic powder, chili flakes, salt, black pepper, and dried parsley.
  2. Add the chicken pieces to the marinade. Mix well to coat all the pieces evenly.
  3. Let the chicken marinate for at least 15–30 minutes (or overnight for maximum flavor).

Step 2: Cook the Chicken in the Air Fryer

  1. Preheat your air fryer to 180°C (350°F).
  2. Place the marinated chicken pieces in the air fryer basket in a single layer.
  3. Cook for 9 minutes on one side, then flip and cook for another 9 minutes.
  4. Check for doneness (internal temperature should reach 75°C/165°F). Set aside.

Step 3: Prepare the Chunky Chips

  1. Peel and slice the potatoes into thick wedges.
  2. Place them in a pot of water with a pinch of salt. Boil for 5 minutes, then drain.
  3. Toss the wedges with garlic powder, paprika, and a drizzle of olive oil.
  4. Place the wedges in the air fryer basket in a single layer.
  5. Cook at 200°C (400°F) for 10 minutes, flip the wedges, and cook for another 5–8 minutes until golden and crispy.

Step 4: Serve and Enjoy

Plate the juicy air fryer chicken with the crispy chunky chips. Pair with a side of fresh coleslaw or a light salad for a complete meal.
