Asian Spiced Beef Noodles – Bold Flavors, Easy Dinner!

Ingredients:
For the noodles:
8 oz (225 g) rice noodles or lo mein noodles
1 tablespoon sesame oil
For the beef:
12 oz (340 g) beef sirloin, thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon cornstarch
1/2 teaspoon ground white pepper
For the stir-fry:
2 tablespoons vegetable oil
3 garlic cloves, minced
1 teaspoon ginger, grated
1 red bell pepper, thinly sliced
1 cup (100 g) shredded carrots
2 cups (60 g) bok choy or spinach, roughly chopped
3 green onions, sliced
For the sauce:
3 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 tablespoon honey or brown sugar
1/2 teaspoon chili flakes (optional, for heat)
Directions:
Prepare the noodles: Cook the noodles according to the package instructions. Drain, rinse with cold water, and toss with sesame oil to prevent sticking. Set aside.
Marinate the beef: In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, and white pepper. Mix well and let marinate for 10-15 minutes.
Make the sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, honey, and chili flakes. Set aside.
Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned. Remove from the skillet and set aside.
Cook the vegetables: In the same skillet, add the remaining vegetable oil. Stir-fry the garlic and ginger for 30 seconds until fragrant. Add the bell pepper, carrots, and bok choy. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Combine: Return the cooked beef to the skillet and pour in the sauce. Toss to coat everything evenly. Add the noodles and stir-fry for 2-3 minutes until heated through and well combined.
