Ingredients:

  • 1 lb ground beef
  • 1/2 onion, finely diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 1/4 cup diced pickles
  • 2 tbsp butter (for cooking)

Directions:

  1. Cook the Ground Beef: Heat a large skillet or griddle (such as a Blackstone) over medium-high heat. Add the ground beef and cook until browned. Stir in the onion, garlic powder, smoked paprika, salt, and pepper. Cook for 5 minutes until the onion is soft. Remove from heat and drain excess fat.
  2. Prepare the Tortillas: Lay out the tortillas on a flat surface. Spread ketchup and mustard evenly over half of each tortilla.
  3. Assemble the Quesadillas: Sprinkle shredded cheese over the ketchup and mustard layer. Add a generous scoop of cooked ground beef mixture, then top with diced pickles. Fold the tortilla in half to create a half-moon shape.
  4. Cook the Quesadillas: Melt 1 tbsp butter on the Blackstone griddle (or a large skillet). Place the quesadillas on the griddle and cook for 3-4 minutes per side, pressing gently with a spatula, until golden brown and crispy.
  5. Serve: Remove from heat, slice into wedges, and serve immediately. Add optional toppings like sour cream or extra pickles for dipping.
