Ingredients

– 1 baguette, sliced into 1/2-inch thick pieces
– 2 tbsp olive oil (for brushing)
– 2 large ripe tomatoes, diced (or use cherry tomatoes, halved)
– 1-2 fresh burrata balls (8 oz total)
– 1 garlic clove, peeled and halved
– 1-2 tbsp fresh basil, chopped
– 2 tbsp extra virgin olive oil (for drizzling)
– 1 tbsp balsamic glaze (optional, for drizzling)
– Salt and black pepper to taste

Instructions

1. Toast the Bread:
– Preheat the oven to 400°F (200°C).
– Place the baguette slices on a baking sheet and brush both sides with olive oil.
– Bake for 8-10 minutes, flipping halfway, until golden and crisp.
2. Prepare the Tomato Mixture:
– In a bowl, mix the diced tomatoes with 1 tbsp olive oil, a pinch of salt, and black pepper. Add chopped basil and gently toss.
3. Assemble the Bruschetta:
– Rub the toasted bread slices with the cut side of the garlic clove for a hint of flavor.
– Spoon the tomato mixture onto each slice. Tear pieces of burrata and place them gently on top of the tomatoes.
4. Finish and Serve:
– Drizzle with extra virgin olive oil and balsamic glaze, if using.
– Sprinkle with more fresh basil, salt, and black pepper.
5. Enjoy:
– Serve immediately while the bread is still crispy and the burrata is creamy!
