Ingredients:
– 1 lb fettuccine, uncooked
– 1.5 lbs boneless, skinless chicken breasts
– 3 tbsp Cajun seasoning
– 1/4 cup butter
– 2 tbsp garlic puree
– 3 cups heavy cream
– 1/2 tsp salt
– 1/2 tsp pepper
– 2/3 cup shredded Parmesan cheese
– 2 tbsp chopped chives
Instructions:
1. Cook fettuccine according to package directions, then drain and set aside.
2. Cut chicken breasts into 1-inch cubes.
3. Coat chicken with Cajun seasoning in a mixing bowl.
4. Cook chicken in a saute pan for 8 minutes.
5. Add butter and garlic, stir until melted.
6. Pour in heavy cream, salt, and pepper, bring to a boil.
7. Reduce heat, simmer with lid on for 8 minutes.
8. Stir in cooked fettuccine, continue cooking for 4 minutes.
9. Add Parmesan cheese, stir until melted.
10. Mix in chopped chives.
11. Serve and enjoy!
