Cheesy Garlic Butter Salmon with Spinach: A Creamy, Flavor-Packed Dinner Idea!
Ingredients:
– 4 salmon fillets (skin-on or skinless)
– 1 tablespoon olive oil
– Salt and black pepper to taste
– 2 cups fresh spinach (sautéed)
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– 2 tablespoons butter (melted)
– 2 garlic cloves (minced)
– 1 teaspoon lemon juice
– 1/2 teaspoon dried parsley
Instructions:
1. Prepare the Salmon:
– Preheat your oven to 375°F (190°C).
– Heat a tablespoon of olive oil in a large oven-safe skillet over medium heat.
– Season the salmon fillets with salt and black pepper on both sides.
– Once the skillet is hot, place the salmon fillets in the skillet, skin-side down if using skin-on. Cook for 3-4 minutes on each side until the salmon is golden brown and cooked through. Remove from the skillet and set aside.
2. Sauté the Spinach:
– In the same skillet, add the spinach and sauté for 2-3 minutes until wilted. Remove from the skillet and set aside.
3. Make the Garlic Butter Sauce:
– In a small bowl, melt the butter in the microwave or on the stovetop.
– Stir in the minced garlic, lemon juice, and dried parsley. Mix well.
4. Assemble the Dish:
– Return the cooked salmon fillets to the skillet, placing them on top of the sautéed spinach.
– Spoon the garlic butter sauce evenly over the salmon fillets.
– Sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top of the salmon.
5. Bake:
– Place the skillet in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly and the salmon is fully cooked.
6. Serve:
