One-Bowl Wonder: Ground Turkey & Roasted Veggie Rice Bowl with Tons of Flavor

A protein-packed, flavor-loaded meal that’s easy and satisfying!

Ingredients:

For the Ground Turkey:
1 lb ground turkey (or chicken)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon soy sauce
1/2 teaspoon chili flakes (optional)
1/2 cup mushrooms (chopped)
1/4 cup onion (diced)
For the Roasted Veggies:
1/2 cup zucchini (sliced)
1/2 cup yellow squash (sliced)
1/2 cup bell peppers (chopped)
1/2 cup broccoli florets
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Bowl:
1 cup cooked white or brown rice

Step by Step:

1.Prepare the Roasted Veggies:
Preheat oven to 400°F (200°C). Toss zucchini, squash, bell peppers, and broccoli with olive oil, salt, and pepper. Roast for 15-20 minutes until tender and slightly charred.

2️Cook the Ground Turkey:
Heat olive oil in a pan over medium heat. Add diced onions and mushrooms, sauté for 3-4 minutes.
Add ground turkey, breaking it apart. Season with salt, black pepper, garlic powder, onion powder, and chili flakes.
Cook until browned, then stir in soy sauce. Simmer for 2 minutes.

3️Assemble the Bowl:
Place rice in a bowl, then top with roasted veggies and cooked turkey mixture

4️Serve & Enjoy:
Garnish with extra soy sauce or a drizzle of your favorite sauce.
