Ultimate Comfort Food Dinner: Honey Fried Chicken, Baked Mac and Cheese, Corn on the Cob, and Garlic Pepper Broccoli

Honey Fried Chicken

Ingredients:

4 chicken breasts
2 cups all-purpose flour
2 teaspoons paprika
1 teaspoon salt
1 teaspoon black pepper
1 cup buttermilk
1 cup honey
vegetable oil, for frying

Instructions:

Preheat your oven to 350°F (175°C).
In a shallow dish, mix together the flour, paprika, salt, and black pepper.
Pour the buttermilk into another shallow dish.
Dip each chicken breast into the buttermilk, then coat it in the flour mixture. Repeat this process until all the chicken breasts are coated.
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the chicken breasts to the skillet.
Cook the chicken for about 5-6 minutes on each side, or until it is golden brown and cooked through.
Remove the chicken from the skillet and place it on a baking sheet. Brush the honey over the top of each chicken breast.
Bake the chicken in the preheated oven for about 10-15 minutes, or until it is heated through and the honey is caramelized.
Serve the chicken hot, with your choice of sides.

Baked Mac and Cheese

Ingredients:

8 ounces macaroni pasta
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
1/2 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
salt, to taste
black pepper, to taste
1/2 cup breadcrumbs
2 tablespoons butter, melted

Instructions:

Preheat your oven to 350°F (175°C).
Cook the macaroni according to the package instructions. Drain the pasta and set it aside.
In a large saucepan, melt the butter over medium heat. Add the flour and whisk together to form a roux.
Slowly add the milk to the roux, whisking constantly to prevent lumps. Bring the mixture to a boil, then reduce the heat to low and simmer for about 2-3 minutes, or until the sauce has thickened.
Add the cheddar cheese and mozzarella cheese to the sauce, stirring until the cheese has melted. Season the sauce with salt and black pepper to taste.
Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.
Transfer the macaroni and cheese to a large baking dish. In a small bowl, mix together the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the top of the macaroni and cheese.
Bake the mac and cheese in the preheated oven for about 15-20 minutes, or until the breadcrumbs are golden brown and the sauce is bubbly.
Serve the mac and cheese hot.

Corn on the Cob

Ingredients:

4 ears of corn, husked
water, for boiling
salt, to taste
butter, for serving (optional)

Instructions:

Bring a large pot of water to a boil.
Add the corn to the boiling water and cook for about 5-7 minutes, or until the corn is tender.

Remove the corn from the boiling water and place it on a plate.

Season the corn with salt to taste.
Serve the corn hot, with butter on top if desired.

Garlic Pepper Broccoli

Ingredients:

1 head of broccoli, cut into florets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon black pepper
salt, to taste

Instructions:

Preheat your oven to 400°F (200°C).
Place the broccoli florets on a baking sheet.
In a small bowl, mix together the olive oil, garlic, black pepper, and salt.
Brush the oil mixture over the broccoli florets, making sure they are evenly coated.
Bake the broccoli in the preheated oven for about 10-15 minutes, or until it is tender and caramelized.
Serve the broccoli hot.
