Mediterranean Ground Beef Stir Fry – Quick, Flavorful & Healthy!

A quick and flavorful Mediterranean-inspired stir fry packed with colorful vegetables and seasoned ground beef, perfect for a healthy meal!

Prep Time: 10 minutes | Cooking Time: 15 minutes | Total Time: 25 minutes

Ingredients:

1 pound ground beef
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, thinly sliced
1 zucchini, cut into half-moons
1 cup cherry tomatoes, halved
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon dried oregano
Salt and black pepper, to taste
¼ teaspoon red pepper flakes (optional, for heat)
¼ cup fresh parsley, chopped
½ cup feta cheese, crumbled (optional, for garnish)
Lemon wedges (for serving)

Directions:

Sauté the Aromatics:

Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook for 2-3 minutes until softened.
Stir in the minced garlic and cook for 30 seconds until fragrant.

Cook the Ground Beef:

Add the ground beef to the skillet, breaking it up with a spoon.
Season with cumin, paprika, oregano, salt, black pepper, and red pepper flakes (if using).
Cook for 6-8 minutes, until the beef is browned and cooked through.

Add the Vegetables:

Stir in the red bell pepper and zucchini. Cook for 4-5 minutes until slightly tender but still crisp.
Add the cherry tomatoes and cook for 2 more minutes until they soften slightly.

Finish & Serve:

Remove from heat and stir in the chopped parsley.
If using, sprinkle crumbled feta cheese over the top.
Serve warm with lemon wedges for an extra burst of flavor.

Serving Suggestions:

Serve over cooked quinoa, rice, or with warm pita bread.
Pair with a side of tzatziki or hummus for an authentic Mediterranean touch.
