Ingredients:
For the Salmon:
โ 2 salmon fillets (skin-on or skinless)
โ 1 tablespoon olive oil
โ 1 teaspoon salt
โ 1/2 teaspoon black pepper
For the Florentine Sauce:
โ 2 tablespoons butter
โ 2 garlic cloves, minced
โ 1/2 cup mushrooms, sliced
โ 1 cup heavy cream
โ 1/2 cup grated Parmesan cheese
โ 2 cups fresh spinach leaves
โ Salt and pepper to taste
โ Pinch of nutmeg (optional)
Directions:
1. Cook the Salmon:
โ Pat the salmon fillets dry and season with salt and pepper.
โ Heat olive oil in a skillet over medium-high heat.
โ Place the salmon fillets skin-side down (if applicable) and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
2. Prepare the Florentine Sauce:
โ In the same skillet, melt butter over medium heat.
โ Sautรฉ minced garlic and sliced mushrooms until soft and fragrant.
โ Stir in heavy cream and bring to a simmer.
โ Add Parmesan cheese and stir until melted and the sauce thickens.
โ Toss in fresh spinach and cook until wilted. Season with salt, pepper, and a pinch of nutmeg if desired.
3. Assemble:
โ Place the salmon fillets on a plate and spoon the creamy Florentine sauce over the top.
โ Serve immediately with your favorite side dish, such as rice or roasted vegetables.
