Strawberry Crunch Cheesecake Bites Recipe

These Strawberry Crunch Cheesecake Bites are the perfect bite-sized dessert combining creamy cheesecake with a crunchy, sweet strawberry coating. These little treats are perfect for any occasion and a fun twist on traditional cheesecake!

Ingredients:
For the Cheesecake Bites:
16 oz (2 packages) cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup sour cream
1/2 cup heavy cream
1 tablespoon all-purpose flour
For the Strawberry Crunch Topping:
1 1/2 cups Golden Oreos (about 12 cookies)
1/4 cup freeze-dried strawberries
3 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
1/2 teaspoon vanilla extract
For Garnish (Optional):
Fresh strawberry slices (for decoration)
Instructions:
1. Make the Cheesecake Bites:
Preheat oven to 325°F (163°C). Line a mini muffin tin or silicone mini cheesecake mold with cupcake liners.
In a medium-sized bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
Add the granulated sugar and vanilla extract to the cream cheese mixture, and continue mixing until combined.
Add the egg and beat until the mixture is smooth and fluffy. Scrape down the sides of the bowl as needed.
Add the sour cream, heavy cream, and flour to the mixture and mix until everything is well incorporated.
Spoon the cheesecake batter into each cupcake liner or mold, filling each about 2/3 of the way.
Bake for 15-18 minutes, or until the edges of the cheesecakes are set, but the center still has a slight jiggle. The cheesecakes should not be fully firm in the center.
Allow the cheesecakes to cool in the pan for 10 minutes before transferring to the refrigerator to chill for at least 4 hours or overnight.
2. Make the Strawberry Crunch Topping:
While the cheesecake bites are chilling, prepare the crunchy topping.
Place the Golden Oreos and freeze-dried strawberries in a food processor and pulse until finely crushed.
Add the melted butter, granulated sugar, and vanilla extract to the crushed Oreo mixture and pulse again until combined and crumbly.
Set the strawberry crunch mixture aside.
3. Assemble the Cheesecake Bites:
Once the cheesecake bites are fully chilled and firm, carefully remove them from the muffin tin or mold.
Roll each cheesecake bite in the strawberry crunch mixture, ensuring they are fully coated.
If desired, garnish with a fresh strawberry slice on top for a fresh touch.
