Ingredients

For the Apple Filling:

  • 2 medium apples (peeled, cored, diced into ½-inch pieces)
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice (to prevent browning)
  • 1 tsp cornstarch (to thicken)
  • 1 tbsp water

For the Biscuit Dough:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ cup granulated sugar
  • ½ cup (1 stick) cold unsalted butter, cubed
  • ¾ cup cold milk (or buttermilk for extra tenderness)
  • 1 tsp vanilla extract (optional)

Optional Toppings:

  • Cinnamon-sugar mix (1 tbsp sugar + ½ tsp cinnamon)
  • Powdered sugar glaze (½ cup powdered sugar + 1–2 tsp milk)

Instructions

  1. Prepare the Apple Filling:
    • In a saucepan, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5 minutes.
    • Mix cornstarch with water, then stir into the apples. Cook 2–3 more minutes until thickened. Remove from heat and let cool.
  2. Make the Biscuit Dough:
    • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
    • In a large bowl, whisk together flour, baking powder, salt, and sugar.
    • Cut cold butter into the dry ingredients using a pastry cutter or fingers until pea-sized crumbs form.
    • Add milk and vanilla (if using). Stir until just combined (do not overmix).
  3. Assemble the Biscuits:
    • Gently fold the cooled apple filling into the dough (be careful not to overwork it).
    • Turn dough onto a floured surface. Pat into a 1-inch-thick rectangle. Fold in half, then pat down again (creates layers).
    • Use a round biscuit cutter (2.5–3 inches) to cut out biscuits. Place on the baking sheet.
  4. Bake:
    • Optional: Brush biscuit tops with milk and sprinkle cinnamon-sugar.
    • Bake 12–15 minutes until golden brown.
  5. Serve:
    • Drizzle with powdered sugar glaze while warm, or serve with vanilla ice cream!

Tips

  • Use cold butter for flaky layers.
  • Granny Smith or Honeycrisp apples work best (hold shape when baked).
  • Don’t twist the biscuit cutter—press straight down for even rise.
