Ingredients

For the Pancakes:

  • 3½ tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • 3 tbsp honey (or more to taste)
  • 1¼ cups milk (whole or buttermilk for extra richness)
  • 3 tbsp unsalted butter, melted (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

For Serving:

  • Extra honey or maple syrup
  • Butter
  • Fresh berries, banana slices, or chopped nuts

Instructions

  1. Mix Dry Ingredients:
    In a large bowl, whisk together flourbaking powder, and salt.
  2. Combine Wet Ingredients:
    In another bowl, beat the egg, then whisk in honeymilkmelted butter, and vanilla (if using).
  3. Make the Batter:
    Pour the wet ingredients into the dry ingredients and stir gently until just combined (small lumps are okay—overmixing makes dense pancakes).
  4. Cook the Pancakes:
    • Heat a griddle or skillet over medium heat. Lightly grease with butter.
    • Pour ¼ cup batter per pancake onto the griddle. Cook until bubbles form on the surface and edges look dry (~2–3 minutes).
    • Flip and cook another 1–2 minutes until golden brown.
  5. Serve Warm:
    Stack the pancakes and top with a drizzle of honey, a pat of butter, and your favorite fruits or nuts.

Tips

  • Honey Adjustment: For sweeter pancakes, add an extra 1–2 tbsp honey.
  • Fluffy Texture: Let the batter rest 5 minutes before cooking for extra lift.
  • Keep Warm: Place cooked pancakes on a baking sheet in a 200°F (95°C) oven while finishing batches.
  • Substitutions: Use almond milk or oat milk for a dairy-free version.
