Ingredients:

  • 2 Porterhouse pork chops
  • 1/4 cup apple juice
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1/2 teaspoon Old Bay seasoning
  • Sea salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1/2 red onion, thinly sliced
  • Garlic herb red skin mashed potatoes (optional, for serving)

Instructions:

  1. In a resealable plastic bag, mix together the apple juice, apple cider vinegar, minced garlic, fresh thyme sprigs, Old Bay seasoning, sea salt, and black pepper.
  2. Add the Porterhouse pork chops to the bag, seal, and shake to coat well. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat the oven to 375°F.
  4. Heat olive oil in a cast iron skillet over medium-high heat. Remove the pork chops from the marinade, allowing any excess to drip off, and add to the skillet. Sear the chops on both sides until browned well, about 5 minutes per side.
  5. Remove the chops from the skillet and add the thinly sliced red onion and minced garlic. Sauté for a couple of minutes until fragrant and softened.
  6. Pour in the remaining marinade and bring to a simmer.
  7. Return the pork chops to the skillet and cover with the onion and marinade mixture.
  8. Transfer the skillet to the preheated oven and bake for 30 minutes until the chops are fully cooked.
  9. Remove from the oven and let the chops rest for 5 minutes before serving.
  10. Serve hot with garlic herb red skin mashed potatoes or your favorite sides.
