Ground Beef with Vegetables Soup
1 lb celery
1 lb carrots
1 lb green beans
1 lb bag of frozen peas
1.5 lb 93/7 ground beef
1 can tomato paste
1 can crushed tomatoes
1 can beef broth
like a cup or 2 of water
salt, pepper, oregano
Dump everything except for frozen peas and ground beef in crock pot, cook on low for 8 hours.
Around the 5 hour mark, I made like 50 small patties with the ground beef, cooked them on the stove and threw them in the soup when finished cooking them.
About 20 minutes before the 8 hour mark, I added the frozen peas.
Served it with rolls with butter/oregano 👌🏽
Next time, I think I’ll air fry the potatoes for like 10 minutes before I put them in with the other veggies. I feel like they weren’t as flavorful as the rest and maybe cooking them a little before will help. Also might add a can of corn next time!
