8 ounces elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon cajun seasoning
Salt and pepper, to taste
1 pound chicken breasts
1 cup flour
2 eggs, beaten
1 cup breadcrumbs
1/2 cup Hennessy cognac
1/4 cup honey
2 tablespoons butter
1 teaspoon cajun seasoning
Preheat your oven to 350°F (180°C).
Cook the macaroni according to the package instructions.
In a separate pan, melt the butter over medium heat. Add the flour and whisk together to form a roux. Cook for 1-2 minutes, until the roux is golden brown.
Slowly add the milk to the roux, whisking constantly to prevent lumps from forming. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 minutes, until the sauce thickens.
Remove the sauce from the heat and stir in the cheddar, mozzarella, Parmesan, and cajun seasoning. Season with salt and pepper to taste.
Add the cooked macaroni to the sauce and stir to combine. Pour the mixture into a 9×13-inch baking dish.
In a shallow bowl, mix together the flour, eggs, and breadcrumbs. Cut the chicken breasts into bite-sized pieces and coat them in the flour mixture.
Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the pan. When the oil is hot, add the chicken pieces and cook for 2-3 minutes on each side, until golden brown.
In a separate pan, combine the Hennessy, honey, butter, and cajun seasoning. Bring the mixture to a boil, then reduce the heat to low and simmer for 5-7 minutes, until the sauce thickens and reduces by about half.
Brush the Hennessy sauce over the fried chicken pieces and place them on top of the mac and cheese in the baking dish.
Bake the dish for 15-20 minutes, until the cheese is melted and bubbly.
