2 medium sized russet potatoes
2 slices crispy fried bacon (crumbled)
This is a porterhouse that I seasoned with a lil salt, pepper and basil……that’s it. I seared it in my CI skillet with a lil EVOO 3 minutes per side then into a preheated 400° oven for 10 minutes. The perfect medium steak. But what I really wanted to share with y’all are these potatoes, OMG they are oh so good. I took a couple of medium sized russet potatoes (skin on) washed then dried them well and place in the microwave for about 7 -8 minutes allow them to cool then slice into 1/4 inch thick rounds. Season with salt pepper and basil then into a preheated skillet with EVOO until golden brown and crispy on both sides. Sprinkle grated cheddar cheese on top while the potatoes are still hot and top with crumbled bacon. These potatoes are so soft and fluffy inside and crispy outside.
