Ingredients

  • ½ cup sour cream
  • 2 tbsp all-purpose flour

  • 1 ½ cups crushed vanilla wafers (or graham crackers)
  • ½ cup unsalted butter, melted
  • ½ cup caramel sauce (for drizzling on top)

Directions

1. Prepare the Crust:

  • Preheat oven to 325°F (163°C).
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until the texture resembles wet sand.
  • Press the mixture into a 9-inch springform pan to form an even crust.
  • Bake for 10–12 minutes or until golden. Set aside to cool.

2. Make the Cheesecake Filling:

  • Beat softened cream cheese until smooth. Add sugar and mix until fully combined.
  • Add eggs one at a time, mixing well after each. Stir in vanilla extract, sour cream, and flour.
  • Pour half the cheesecake filling over the crust.
  • Drizzle ¼ cup caramel sauce over the filling and swirl with a knife to marble.
  • Add the remaining cheesecake filling on top and smooth the surface.

3. Bake the Cheesecake:

  • Bake at 325°F (163°C) for 50–60 minutes or until the center is just set.
  • Let the cheesecake cool in the oven with the door slightly open for 1 hour. Cool to room temperature afterward.

4. Prepare the Crunch Topping:

  • Mix crushed vanilla wafers with melted butter until evenly coated.
  • Sprinkle the mixture over the cooled cheesecake and press gently.

5. Add the Final Touch:

  • Drizzle the remaining caramel sauce over the cheesecake.

6. Chill and Serve:

  • Refrigerate for at least 4 hours or overnight before serving.
