Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup arrowroot powder
  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated Swerve sweetener
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

For the Lemon Curd Filling:

  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 large egg yolks
  • 1/4 cup granulated Swerve sweetener
  • 4 tablespoons unsalted butter, softened

For the Lemon Butter Frosting:

  • 1/2 cup unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups powdered Swerve sweetener

Instructions

For the Cake:

  1. Preheat your oven to 350°F. Grease three 8-inch cake pans with cooking spray, then line with parchment paper and grease again.
  2. In a medium bowl, whisk together the almond flour, coconut flour, arrowroot powder, baking powder, baking soda, and salt.
  3. In a large bowl, beat the butter and Swerve sweetener together with an electric mixer until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
