4 lbs beef short ribs
Salt and pepper, to taste
2 cups beef broth
2 cups red wine
2 cups diced onion
2 cups diced carrot
2 cups diced celery
2 cloves garlic, minced
1 lb macaroni
4 cups heavy cream
2 cups grated cheddar cheese
2 cups grated parmesan cheese
4 cups French fries


Preheat oven to 350°F.
Season the short ribs with salt and pepper.
In a large Dutch oven or casserole, brown the short ribs on all sides over medium-high heat.
Add the beef broth, red wine, onion, carrot, celery, and garlic. Bring to a simmer, then cover and transfer to the oven.
Braise the short ribs for 2-3 hours, or until tender and falling off the bone.
While the short ribs are cooking, bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions. Drain and set aside.
