This grilled shrimp and avocado salad is a refreshing and healthy summer meal. With tomato, hard boiled egg, carrot, green pepper, and romaine lettuce, it’s packed with nutrients and flavor.
8 ounces grilled shrimp
1 avocado, diced
1 tomato, diced
1/4 cup shredded cheese
1 hard boiled egg, sliced
1 carrot, shredded
1/2 green pepper, diced
2 cups romaine lettuce, chopped
Grill the shrimp according to your preferred method (on the grill, in a grill pan, or under the broiler).
Assemble the salad by placing the romaine lettuce in a large bowl and topping with the diced avocado, tomato, green pepper, carrot, and hard boiled egg.
Add the grilled shrimp on top of the salad.
Sprinkle the shredded cheese over the top of the salad.
Serve the salad immediately, with your favorite dressing on the side.
