Roasted Salmon and Broccoli Pasta

This Roasted Salmon and Broccoli Pasta recipe is the perfect recipe for the best quick weeknight dinner. Easy to put together, fresh salmon fillets, broccoli, your favorite pasta, and some cream, delicious ingredients for a great home-cooked meal.

Ingredients:

2 salmon fillets
1 head of broccoli, cut into florets
8 ounces of pasta (use your favorite type)
Olive oil
Salt and pepper
2 cloves of garlic, minced
2 tablespoons of butter
2 tablespoons of all-purpose flour
1 cup of milk
1/2 cup of grated Parmesan cheese
2 tablespoons of chopped fresh parsley

Instructions:

Preheat your oven to 400°F (200°C).
Place the salmon fillets on a baking sheet and season them with salt and pepper. Roast the salmon in the preheated oven for 12-15 minutes, or until it is cooked to your desired level of doneness.
Meanwhile, bring a large pot of salted water to a boil. Add the pasta and broccoli to the pot and cook until the pasta is al dente and the broccoli is tender, about 8-10 minutes. Drain the pasta and broccoli and set them aside.
In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, or until it is fragrant. Add the butter to the pan and let it melt. Stir in the flour and cook for 1-2 minutes, or until the mixture becomes thick and pasty. Slowly add the milk to the pan, whisking constantly to prevent lumps from forming. Bring the mixture to a boil and then reduce the heat to low. Let the sauce simmer for 5 minutes, or until it has thickened.
Stir the grated Parmesan cheese into the sauce. Add the sauce to the pasta and broccoli and toss to coat.
Divide the pasta and broccoli mixture among serving bowls. Top each bowl with a piece of roasted salmon and sprinkle with chopped parsley. Serve hot.
