  • 1 bay leaf
  • Salt and pepper to taste

Leek and Mushroom Layer

  • 1 tbsp of butter
  • 2 leeks, sliced
  • 1 clove of garlic, minced
  • 200g/2 cups of mushrooms, sliced
  • 125ml/1/2 cup of double/heavy cream
  • 1 tbsp of chopped parsley
  • Salt and pepper to taste

Assembly

  • 250g/8 oz of fresh mozzarella, shredded by hand into chunks
  • 10 fresh lasagna sheets (or enough for 5 layers, approximately 320g/11 oz)

Crafting the Culinary Masterpiece

Preparing the Filling

  1. Preheat the oven to 180C/350F. Begin by sautéing minced garlic in butter for 30 seconds over medium heat.
  2. Add the seafood mix and a pinch of salt, cooking while stirring for 2-3 minutes.
  3. Pour in the white wine and let it reduce for approximately 5 minutes. Stir occasionally.
  4. Transfer the seafood to a plate and set it aside for later use.

Crafting the Bechamel Sauce

  1. In the same pan, add butter and let it melt. Add flour and mix well.
  2. Continue cooking the mixture over medium heat, stirring for 2-3 minutes.
  3. Add milk, a bay leaf, and 1/4 tsp of grated nutmeg. Bring it to a boil, then let it simmer until the sauce thickens and coats a spoon.

  1. Cover the bottom of a 9X13 inch rectangular baking dish with a thin layer of bechamel sauce.
  2. Place fresh lasagna sheets over the sauce, add half of the seafood mixture, and about a third of the remaining sauce.
  3. Add another layer of fresh lasagna sheets, covering them with the leek and mushroom mixture.
  4. Continue layering with lasagna sheets, the second half of the seafood mix, and a third of the bechamel sauce.
  5. Finish with a final layer of lasagna sheets, the rest of the bechamel sauce, and scatter torn fresh mozzarella cheese all over.
  6. Cover with aluminum foil (Tip: spray it with cooking spray or brush with oil to avoid sticking to cheese) and bake in the preheated oven for 20 minutes. Uncover and bake for an additional 10-15 minutes until the cheese is bubbly and golden in places.
  7. Let the cooked lasagna rest for 10 minutes before cutting it.

  • Use 10 fresh lasagna sheets for a 9X13 inch pan. Adjust according to the product you use, ensuring enough sheets for 5 layers.
  • Pre-cook dried pasta sheets if using.
