Seafood quesadilla with salmon, lobster, shrimp, and caramelized onions and peppers

Ingredients:

8 ounces salmon fillets, cut into 1-inch pieces
8 ounces lobster meat, cut into 1-inch pieces
8 ounces large shrimp, peeled and deveined
2 bell peppers (any color), thinly sliced
1 large onion, thinly sliced
2 tablespoons olive oil
Salt and pepper, to taste
8 flour tortillas
4 cups shredded cheese (such as Monterey Jack or cheddar)
Fresh cilantro, for garnish
Sour cream, for serving (optional)

Instructions:

Preheat a grill or grill pan to medium-high heat.

In a bowl, toss the salmon, lobster, and shrimp with the olive oil and a pinch of salt and pepper.

Grill the seafood for 2-3 minutes per side, or until cooked through. Remove from the grill and set aside.

In a separate pan, heat the remaining olive oil over medium heat. Add the sliced peppers and onions and cook until caramelized, about 8-10 minutes.

Assemble the quesadillas: place a tortilla on a flat surface, and top with 1/2 cup of cheese, some of the grilled seafood, and a handful of caramelized onions and peppers. Top with another tortilla and press gently to seal.

Heat a large pan or griddle over medium heat. Place the quesadilla in the pan and cook for 2-3 minutes per side, or until the cheese is melted and the tortilla is golden brown.

Repeat the process with the remaining ingredients to make 4 quesadillas in total.

Serve the quesadillas hot, garnished with fresh cilantro and a dollop of sour cream if desired. Enjoy!
