1 pound pasta (such as fettuccine or linguine)
1 pound large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1 tablespoon olive oil
1/2 pound andouille sausage, sliced
1/2 cup diced onions
1/2 cup diced bell peppers
1/2 cup diced celery
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
2 tablespoons tomato paste
1 teaspoon hot sauce (such as Tabasco)
Salt and pepper to taste
Cook the pasta according to the package instructions.
Meanwhile, toss the shrimp with the Cajun seasoning. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until they are pink and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the andouille sausage and cook for 2-3 minutes, or until it is browned and crispy.
Add the onions, bell peppers, celery, and garlic to the skillet. Cook for 3-4 minutes, or until the vegetables are tender.
Stir in the heavy cream, chicken broth, tomato paste, and hot sauce. Bring the mixture to a boil, then reduce the heat to low and simmer for 5-10 minutes, or until the sauce has thickened.
Add the cooked pasta and shrimp to the skillet and toss everything together until the pasta is coated in the sauce.
Serve the pasta hot, garnished with chopped fresh parsley if desired. Enjoy!
